1 large sea bass ( 1 to 1.5 kg )

100 g of fennel

1 tablespoon capers

100 g dried tomatoes in oil

50 g green olives 50 ml olive oil

4 tablespoons sherry

Bass , clean , wash and pat dry with a paper towel . Fennel cleaned , cut into slices and sprigs been broken into small pieces and leave for later .




Take 1 large piece of baking paper , and on it put the fish .




After the fish Arrange sliced ​​fennel , capers , dried tomatoes , green olives , olive oil and sherry .



Gently add salt and pepper , wrap well , put on a baking sheet and bake at 200 ° C for 20-25 minutes . Remove from the oven and let it stand for a few minutes .  




When the packet open Sprinkle fish with torn branches of fennel and serve with toasted bread and salad.    




Instead of whole fish you can use and only fillets .
